Manchego should be eaten as it is to taste all its flavour. Nothing fancy. Just take it out from the fridge 10 minutes beforehand, and cut it into medium thick slices about 6mm (1/4”) thick. Eaten as an appetizer before the meal it is complemented perfectly by a glass of Viña Bujanda red wine
