Chorizo is a pork sausage that has many different varieties and is eaten all over Spain.
Chorizo is readily distinguished by its deep red colour. The colour comes from smoked paprika, derived by grinding dried red peppers. Chorizo can be spicy or sweet depending on the variety of paprika used.
The Spanish Hamper chorizo is made using smoked paprika from La Vera. Traditional producers in Segovia, central Spain, mince the pork and marinate it in a variety of spices. Smoked paprika is the spice which gives chorizo its characteristic flavour. The sausage is made using natural animal casings.
It may be sliced and eaten alone or with crusty French bread (bocata in Spanish). We recommend you always have a tasty piece of chorizo in your fridge for random tapas!
