In order to protect the food name, the authentic manchego is the one who is labeled by the denomination of origin.
This body is in charge of look after the art of making the cheese, from the begining to the end. Authentic manchego is only made 100% by manchega sheep milk, and have to meet their hight standards. It means a minimum aged time of 4 months for the semi cured and 12 months for the cured.
Be cautious at the moment of buying. If there is no label, then it is not manchego.
