Produced in La Mancha in Central Spain, is made from 100% sheep’s milk.
The texture is firm but not dry and has a few small air pockets spread throughout. Ivory coloured with brown and greenish details of the Jalapeño cream.
The flavour is very similar to the cured manchego cheese but it has an extra layer of light Jalapeño taste, remaining mentioned flavour for a longer aftertaste.

Pasteurised sheep’s milk, 3% Jalapeño cream (Jalapeño peppers. olive oil, onion, acidity regulator: citric acid, salt, garlic, 1.27% horseradish powder, humectant: sorbitol, sunflower oil, water, <1% horseradish: Eutrema japonicum, mustard , extract, turmeric, colour: Brilliant Blue FCF), salt, firming agent: calcium chloride, rennet, lactic ferments. Preservative: lysozyme (derived from egg). On the rind, Preservative: natamycin. Rind is not edible.
