Made using grapes dried on straw mats, fermented and fortified, then aged under the solaria system. One of the sweetest wines in the world, PX is about as sweet as things can get! Aromas of raisins, molasses, figs, toffee, caramel, nuts, the palate is incredibly thick, dense, with an oily texture, massive concentration and unsurpassed sweetness and prolonged length.
  • Grape variety: 100% Pedro Ximenez
  • D.O. Jerez-Sherry
  • Colour: Dark mahogany with iodine reflections.
  • Nose: Clean and intense aromas of raisins and ripe fruits.
  • Palate: Intense, velvety, dense, very sweet on the palate, with clear notes of plums and raisins, and a very persistent finish.
  • Vineyards: Located in San Lucar de Barrameda.
  • Wine Making: After harvesting, the grapes were subjected to different degrees of sunlight. This traditional method of raisining the fruits, together with a careful preparation, led to the obtaining of musts very rich in sugar. Once these were partially fermented, slowly and at a controlled temperature, they were fortified with wine alcohol up to 15º. After this process, the wine was subjected to oxidative aging, through the traditional system of criaderas and soleras, in American oak casks, for a minimum of 6 years.
